1/2 c. mashed unseasoned potatoes
4 c. confectionery sugar
1/2 tsp. vanilla
Creamy peanut butter

Directions:
Directions:
Combine all ingredients to form a stiff dough to roll out. Divide in half. Turn out on a powdered sugar board. Roll out into a rectangle. Spread with creamy peanut butter. Starting with your most narrow end roll up jelly roll style. Refrigerate at least one hour before cutting into 1/4" to 1/2" slices, if longer wrap in wax/plastic paper to keep from drying out.

This is one of many most treasured recipes in my collections as it was passed on to me by a co-worker from past years while working in Virginia. Her family used this recipe from the era of having gas and sugar stamps during the war. They would be sure to save the sugar stamps to be sure to have enough for the confectionery sugar for Christmas candy making especially for mashed potato candy. I still make this each year for my family and if I do not have any I am sure to be asked why not!
