1 pie crust
4 slices turkey or pig bacon, cut into 1/4" pieces
6 C baby spinach
1.4 lbs yellow onions, cut into thin slices
3/4 t salt
1/4 t dried thyme
3 eggs
3/4 C half & half
1/4 t pepper
1/4 C shredded mozzarella cheese

Heat oven to 375 degrees. Line pan with pie crust. In a skillet cook bacon and onion until the onions are transparent and starting to brown. If tot dry, add a little bit of water. Cover and let cook over low heat for 10 minutes. Add spinach and heat just until spinach wilts. Pour into pie crust. Whisk eggs, half & half, salt , thyme, and pepper and pour over spinach mixture. Bake for 15 min. Reduce oven temp to 325 for 20 min. Top with cheese and broil 2-4 min until browned. Let stand 5 minutes before serving
