2 tbsp. bacon drippings 1/2 lb.lean ground beef
1/2 lb. lean ground pork 1 c. chopped onion
1/2 c. chopped celery
1/2 cup chopped fresh parsley
1/2 chopped green onions
4 cups chicken stock 1 tbls. minced garlic
8 cups cooked Rice
1 c. dry white wine
1 tsp. crushed dry mint
2 tbls. Worcestershire sauce
salt and Hot Sauce to taste

Directions:
In a large deep saucepan over medium heat, saute ground beef and pork in bacon drippings until crumbly. Add onion, celery, parsley, green onions until onions are clear. Stir in stock, garlic, rice, wine, mint, Worcestershire. Add salt and hot sauce. Mix well. Cook, stirring occasionally for 20 min. Cook on low, covered, 1 hour.
