1 pound chicken breasts cut into small pieces
Cajun seasoning (Chef Paul Prudhomme's Poultry Magic is what we use but any of your favorite Cajun would work well)
1/2 cup carrots sliced
1/2 cup yellow pepper sliced into strips
1/2 cup red pepper sliced into strips
1/2 cup broccoli cut into small florets
1/2 cup mushrooms sliced
1 pound linguine noodles
olive oil
2 cups heavy cream
1 cup fresh grated parmesan cheese
mix up flour and water for thickening agent

Directions:
Directions:
In large frying pan heat olive oil add chicken with 1-2 T of Cajun seasoning cook until no longer pink in middle.
Remove chicken and set aside in same pan saute the vegetables (you can add more vegetables if you would like) if needed add more olive oil and seasoning. Add chicken back in and set aside
In large stock pot boil noodles, drain and set aside. In same stock pot add the heavy cream and Parmesan cheese and stir til thickened you may need to add the thickening agent depending on how thick you like your sauce. Add 1-2 more T of seasoning, when you get that thickness add back in the noodles, vegetables and chicken. If it is too thick for you add some milk to the sauce.

Serve with a salad, toasted garlic bread, more fresh grated Parmesan and Cajun if you like more of a kick. Enjoy!
