Chicken Tarragon Recipe

8-10 thinly sliced chicken breasts
flour (rice flour works well)
1/4 Lb-1 stick of butter
(another) 1/2 stick of butter
2-3 sweet onions, sliced (in about 1/4 inch slices)
1 large red pepper, sliced(")
1/2 Lb button mushrooms, sliced(")
Freshly cracked pepper
1 Tbsp dried tarragon leaves,
1 cup dry white wine
1 cup low salt chicken (or vegetable)stock

2 cups shredded sharp Cheddar cheese

Directions:
Directions:
Dredge chicken breasts in flour, saute` in butter.
Set aside in single layer in baking dish.(will use 1 stick of butter)
Saute` remainder of ingredients (except cheese, wine, and stock) until slightly brown.(with remainder of butter)
Add wine, cook on high-med heat until alcohol reduced.
Add chicken stock, simmer for an additional 5 minutes.
Pour on top of chicken in baking pan.
Bake for 20 minutes at 350º, until bubbly and heated through. Put shredded cheese on top, bake another 5 minutes to melt cheese.
Serve hot.

This was a staple when the kids were small. They loved the addition of the cheese, which made it more "kid friendly". Leftovers are great too! Served with rice is best, there is buttery, cheesy sauce in pan.
