2 lbs fresh or frozen spinach
2 onions, chopped
1 bunch green onions, chopped
1/3 cup extra virgin olive oil
1 (8 oz) can tomato sauce
2 T tomato paste
1/2 cup rice
1 tsp dried dill
1 tsp dried parsley
Salt and pepper to taste
2 1/2 cups boiling water
Lemon wedges
Feta cheese

Directions:
Directions:
Saute the chopped onions in olive oil until soft and translucent. Add the tomato sauce and tomato paste and saute for about 5 minutes. Add the spinach and saute for another 5 minutes and then add water, bringing mixture to a boil and add the rice. It will take about 20 to 25 minutes for the rice to cook. Add more water if needed. About 5 minutes before rice is cooked, add parsley, dill, salt, and pepper. Serve with lemon wedges and feta cheese.
