3 cups flour
1 TBL + 2 tsps pumpkin pie spice
2 tsps baking soda
1 1/2 tsps salt
3 cups sugar
1 can (15 oz) 100% pure pumpkin
4 large eggs
1 cup vegetable oil
1/2 cup orange juice or water
2 cups fresh cranberries (chopped)
2 cups pecans (chopped)

Directions:
Directions:
Combine 2 1/2 cups flour, spice, soda, salt in large bowl. Mix sugar, pumpkin, eggs, oil, and juice in small bowl. Dredge cranberries and nuts with 1/2 cup flour. Add pumpkin mix to flour mix. Fold in cranberries, nuts and flour. Pour into greased and floured mini pan or loaf pans. Bake at 350 for 50-55 minutes. Test with toothpick. Cool 10 minutes. Remove to wire racks to cool. Sprinkle powdered sugar on top if desired.
