3/4 lb lean beef (I use flank steak cut across the grain)
Marinade:
1 T rice vinegar
2 tsp sugar
1 tsp soy sauce
1 T water
1 T cornstarch
Sauce:
2 T oyster sauce
2 T soy sauce
1 T water
Thickener:
1 tsp cornstarch mixed w/1T water

1 lb fresh broccoli
2 garlic cloves

Cut beef into thin slices & place in a bowl. Mix marinade adding cornstarch last. Marinate the beef for at least 30 minutes using fingers to rub marinade in. While beef in marinading, prepare the sauce-mix the cornstarch & water thickener & set aside. Wash & drain the broccoli, cut the stock off, peel stock & cut diagonally into thin slices. Cut the flowerets into pieces. Crush the garlic.
Heat the wok (or large fry pan) & add 1 cup oil (peanut oil preferred). When oil is hot, add beef and blanch the beef by letting it lay flat for 30-40 seconds & then stir into separate pieces. Remove the beef from the oil when it changed color and is almost fully cooked. Clean out the wok with paper towels. Add 2 T of oil to wok. When hot, add the crushed garlic and stir fry. Add the broccoli, sprinkle salt & sugar over the broccoli & stir fry gently. (1-2 min max) Add 1/2 cup of water & cook covered 4-5 minutes until broccoli turns bright green, but still crisp. Remove from the wok & drain. Wipe wok & add 2 T oil when oil is hot, add broccoli & beef, add sauce & cornstarch mixture into middle. Mix everything quickly & remove from heat when thickened. Serve immediately

I add onion sometimes & chop onion into triangles & cook with broccoli. Can also add water chestnuts & bamboo shoots. You can also steam the broccoli in the microwave to avoid one of the pan/wok changes.
