2 1/2 cups flour, 1 tsp salt, 2 tsps baking soda, 1 cup vegetable shortening, 2 cups sugar, 2 cups mashed very ripe bananas, 4 eggs slightly beaten, 1 cup chopped walnuts optional.

Directions:
Directions:
Preheat oven to 350ºF. Grease & flour 2 9x5x3 in loaf pans. Stir & toss together the flour, salt, & baking soda. In a large bowl, mix the shortening, sugar mashed banana, eggs, and walnuts. Add the combined dry ingredients & stir just until the batter is thoroughly blended.
Pour in the prepared pan & bake for about 65 minutes. Skewer inserted in the center of the bread should come out clean to be done. Remove from the oven & let cool in the pan for a few minutes & then turn out ontol a rack. (I save overripe bananas in the freezer until I have enough to make this. I have the recipe memorized I have made so many times.)
