4 medium onions sliced
12 saltine crackers crushed
1 stick margarine
1 can Cream of Mushroom soup, undiluted
2 eggs
1/2 to 1c. milk
salt and pepper to taste
grated sharp cheddar cheese

Directions:
Directions:
Melt margarine and cook onions until tender.
Butter a casserole dish and line with cracker crumbs. Add onions and soup in layers until dish is full. Beat eggs and add milk, salt and pepper, pour over casserole. Sprinkle grated cheese and a few more cracker crumbs on top. Bake at 350º until brown and bubbly.

I found this recipe in my recipe box. It was hand written by my mother who Passed away in 1981. She was the best mom and a wonderful cook.
