3 Large Fuji Apples
3 Large Red Delicious Apples
3 Granny Smith Apples
3 Golden Delicious Apples
4 Peaches
1 Cup Sugar
1/4 Cup Cinnamon
4 Cups Flour
2 tsp Salt
1 1/2 Cups Shortening
10 to 12 Tablespoons Cold Water

Directions:
Directions:
In medium bowl with fork,sift together flour and salt then lightly stir. With pastry blender cut in shortening until entire mixture resembles coarse crumbs. Sprinkle in cold water a tablespoon at a time, mixing lightly with a fork after each addition until pastry is just holds together. Shape pastry in to a ball. (If it is a hot day, wrap in waxed paper and refrigerate 30 minutes).
Peel apples, peaches and slice about 1/4" thick. Mix apples, peaches, sugar and cinnamon in large bowl.
Remove pastry from refrigerator and cut in half. Place pastry on two sheets of wax paper and roll pastry so that it will fit a 13 x 18 sheet pan. Place first piece of pastry in pan and using a fork poke whole in sides and bottom of pan. Place mixture in pan then roll out second half of pastry and place it on top of apple mixture. Pinch top and bottom edges of pastry together and cut several slits in top of pastry. Preheat oven to 425º and bake for 40 to 50 minutes.
