5 lbs red potatoes
1 lb bacon, cut small
1 medium onion, chopped
1/4 cup chopped parsley
2 tsp salt
1/2 tsp pepper
1 1/2 T sugar
2/3 cup cider vinegar
1/3 cup water
2 T flour

Directions:
Directions:
Boil potatoes. Remove skins and cut into cubes. Add chopped onion, salt, and pepper. Cook bacon in skillet until crisp. Drain and reserve 1/4 cup bacon drippings in pan. Blend vinegar, water, sugar, and flour. Add to bacon and heat through. Pour over potatoes. Add parsley and toss lightly to serve.
