French Baguette, thinly sliced (you probably wont use the whole loaf)
4 garlic cloves, halved
1 plum tomato, diced
2 T. minced sundried tomatoes (oil packed)
2 T. minced fresh basil
1 t. olive oil
salt and pepper
3 T. goat cheese
3 T. freshly grated Parmesan cheese

Directions:
Directions:
Arrange bread slices on a cookie sheet. Broil for 1 minute, or lightly browned on each side. Lightly rub 1 side of each slice with garlic (not too much).

In a small bowl, combine tomato, sundried tomatoes, basil, olive oil, salt & pepper.

Spread the goat cheese on top of the bread, spoon the tomatoes on top of the goat cheese and sprinkle with parmesan. Broil 1-2 minutes until parmesan starts to melt.
