3 lbs stewing meat (beef)
2 cups sliced or cubed carrots
1 can green beans (drained)
1 can diced tomatoes
2-3 lrg potatoes peeled and cubed
1 bay leaf
2 tbls minced parsley
1 onion diced
1/2 tsp thyme
(other variations include turnips and celery

Directions:

Have 3 lbs of stewing meat cut in 1" cubes. Roll in seasoned flour. Brown in 3 tbsp oil in heavy kettle. Cover with boiling water, simmer 1 1/2 hours. Then add remaining ingredients. Simmer for 30 more minutes. Thicken liquid for gravy. (Mom says this means to mix flour and water in a cup and add to stew pot.)
