Ingredients:  
Ingredients:  
1 lb boneless, skinless, chicken breasts cut into bite size pieces
1 stick of butter
3 Tbs flour
pinch of salt pinch of pepper

Sauce:
2 - 3 red bell peppers (roasted & skinned)
1 can diced and peeled tomatoes
1 can tomato paste
2 - 3 cloves garlic- crushed
1/4 c of toasted almonds - blanched
1/2 tsp cayenne pepper

Directions:
Directions:
Dredge chicken in flour, salt and pepper. Cook in melted butter over medium high heat. Add sauce, cook over low for 5 minutes. Add almonds and serve over rice.

Sauce:
Puree bell peppers in blender. Mix in tomatoe sauces, garlic and cayenne.
