3 sticks butter or margarine, softened
2 cups sugar
1 egg
2 tsp. vanilla
4 to 4½ cups self rising flour, sifted
2 cups pecans, chopped


Directions:
Directions:
In a large bowl, cream together butter and sugar. Add egg and vanilla and mix well. Slowly add sifted flour and mix until dough becomes stiff and is no longer sticky. Add pecans. Separate dough into four sections and roll each section into a 2 inch log. Wrap logs in waxed paper and refrigerate overnight or longer. Slice cold cookie dough into 1/4 inch slices and place on a lightly greased cookie sheet. Bake at 325 degrees for 20 minutes or until lightly browned. Store in airtight container.
