3/4 lb. lean ground beef
1/2 lb. ground veal(I just use extra beef)
1/4 lb. ground pork
11/2 cups soft bread crumb's
1 cup light cream (or use milk)
1/2 cup chopped onion
1 T. butter
1 egg
1/4 cup snipped parsley
1 1/4 t. salt
dash pepper
dash ginger
dash nutmeg
2 T. butter

Gravy:
2 T. butter
2 T. flour
1 beef bouillon cube
1 1/4 cup boiling water
1/2 tsp instant coffee(use Caf LIb or Inka)

Have meats ground together or mix very thoroughly. Soak bread in cream about 5 minutes.
Cook onion in 1 T. butter till tender.
Mix meats, crumb mixture, eggs and spices. Beat 5 minutes at medium speed on electric mixer or mix by hand until well combined. Shape into 1 1/2 inch balls (mixture will be soft-for easier handling, wet hands).
brown meatballs in 2 T. butter. Remove from skillet.
For gravy melt butter and stir in flour. Add beef bouillon dissolved in hot water and coffee powder. Cook and stir till gravy thickens and bubbles. Add meatballs. cover; cook slowly for 30 minutes. baste occasionally.

I usually 4 times this recipe and add 1/4 tsp each of pepper, ginger and nutmeg. I also usually make extra gravy even for single recipe I would almost double it.
