lump crabmeat
1/4 cup olive oil
1 tsp. creole mustard
few shakes of red wine vinegar
salt and pepper
capers
salad greens of your choice
avocado, sliced
creole tomatoes, cut in eights

Directions:
Directions:
Mix all ingredients, except crabmeat and lettuce, with fork and spoon over crabmeat salad.

On a bed of lettuce, pile jumbo lump crabmeat; alternate slices of fresh avocado and creole tomatoes around the plate with crabmeat in middle; top with salt, pepper and capers.
