2 frozen deep dish pie crusts (or make your own-this method comes out great though!)
1 Tbsp sugar
Cheese Mixture:
3 Lbs whole milk ricotta cheese
1 Tbsp flour
2 tsp vanilla
4 egg yolks
2 Tbsp lemon zest

Directions:
Directions:
Push pie crusts into greased 10-12" springform pan to cover bottom and sides. Sprinkle sugar on inside. Bake at 450º for 10 mins, remove from oven and immediately press down with drinking glass to flatten. Combine cheese mixture ingredients and bake in crust at 350º for 60 minutes or until top is golden. Turn oven off and leave in oven to cool to prevent top from splitting.
