1 lb elbow macaroni, cooked per package instructions
1 finely chopped sweet onion
1 stick butter
1-6 Tbsp flour (rice flour works well)
3 cups chicken broth
2 cups shredded cheddar cheese
pepper

Directions:
Directions:
While macaroni is boiling, Saute`onions in butter to clear, not brown.
Add flour through strainer (or sifter) and continue to whisk/stir until roux forms. Add chicken broth until consistency of thin pancake batter. Add cheese and cracked pepper (to taste). Add cooked elbow macaroni. Serve WITHOUT baking while warm. Can add add'l chicken broth to thin sauce. Can add some shredded cheese and/or bread crumbs on top to serve.

Roux is the basis of this sauce (and many meat-based gravies) To avoid creating lumps, add the flour with a strainer or sifter and very little at a time. The roux should become very thick until it is difficult to whisk before you start adding stock.
