Grandma Millies' Baked Calzone Recipe

1 fresh pizza dough (cut in 4)
1 egg
Chopped garlic
Olive oil
Corn meal or flour (for stretching dough)

Cheese Mixture:
3 lbs ricotta cheese
2 cups shredded mozzarella
1 lb provolone cheese sliced then chopped
1 lb ham sliced then chopped
1 lb salami sliced then chopped
2 cups grated Parmesan cheese
3 eggs slightly beaten together
parsley (approximately 3 Tbsp dried or 1 cup fresh chopped)
Approximately 3 Tbsp garlic powder (not garlic salt)
Approximately 1 Tbsp dried oregano
Lots! to taste, freshly cracked pepper

Combine all ingredients of cheese mixture. Cut pizza dough into 4 equal parts with sharp knife or kitchen shears.
Stretch out dough on flour or cornmeal on board to approximately 8" by 12" rectangle, taking care to not tear dough.
Place 1/4 of cheese mixture in half of each rectangle then fold edges to meet.
Put beaten egg to seal dough all around.
Bake at 375 x 40-45 minutes, (on cookie sheet sprayed with Pam or parchment paper)until top crust is golden.
Remove from oven, brush olive oil and chopped garlic on top. Let rest for 15-20 minutes before slicing. Each calzone about 10 slices. Can serve at room temp or reheat.
