5 Lbs. yellow onions (not Vidalia) sliced
Spray Pam,
3Tbsps butter,
A pinch of salt,
¼ cup water
¼ cup dry sherry
2 cups low salt vegetable broth,
2 cups low salt beef broth,
2 cups low salt chicken broth,
2 cups water,
1 tsp thyme,
2 bay leaves,
2 Tbsps gravy master,
Toasted baguette slices
Sharp (Provolone, Parmigiana) Cheese
Mild (Mozzarella, White American) Cheese
Grated Parmigiana Cheese

Directions:
Directions:
Spray entire Dutch oven with Pam,
Add sliced onions,butter, salt
Bake in oven w/cover @400 x 1 hour,
Take out, stir, continue w/lid cracked x 1 hour,
Sauté on medium stovetop burner with ¼ cup water to deglaze (pull brown frond off sides of pan) for ~15mins,
do this 3 times.
Add ¼ cup dry sherry, medium heat x 5 minutes
Add 2 cups low salt vegetable broth,
2 cups low salt beef broth,
2 cups low salt chicken broth,
2 cups water,
Add thyme, bay leaves, gravy master,
Boil only 30 minutes,
Bake toasted baguette slices with sharp, mild and grated cheeses till cheese melted.
Serve soup hot with toasted baguette slice and melted cheeses floating on top.
