Ingredients: 7-8 cloves of garlic 3 large cans crushed tomatoes (I like Redpack), 3 large cans tomato puree, 2 small cans tomato paste, (approximately) 1 quart of water, 2 tbsp sugar, 2 tsp salt, Generous amount of freshly cracked pepper, Few shakes of dried red pepper flakes, (approximately) 2 tsp dried oregano, (approximately) 2 cups DRY red wine, 2 bay leaves, Healthy handful of fresh parsley and fresh basil, coarsely chopped

Directions:Start with a large pot. Smash and then coarsely chop garlic. Saute` on low heat until fragrant and clear, don't let them brown. Add (or equivalent proportion of) 3 large cans crushed tomatoes (I like Redpack), 3 large cans tomato puree, 2 small cans tomato paste, (approx) 1 quart of water, sugar, salt, pepper, dried red pepper flakes, dried oregano, DRY red wine, bay leaves, fresh parsley and fresh basil, coarsely chopped.
Sauce should be the consistency of thin tomato juice with tomato chunks.
Bring to rolling boil on med-high heat.
Once it comes to a boil, place lid to partially cover pot and cook on low to low-med heat for 2 hours, stirring every 20-30 minutes to prevent sticking.
You can add water during cooking if the sauce seems too thick, but don't add water any later than 30 minutes before serving.
Sauce is good after 2 hours, but after 3 or 4, its much better! |

Notes: There are several tomato sauce recipes in this "cookbook", but this is the best for Sunday supper. It's garlicky and the amount is plenty for company as well as for use in other dishes like eggplant and/or lasagna. The amounts are approximate, more important are the proportions. Also, don't start this sauce if you don't have time to let it cook, there are other "quick" tomato sauces for those occasions.
