2 BIG cans of Green Beans (80 servings total minimum)
3 lbs of bacon ends & pieces
3 cups of diced onions
2 T of black pepper
3 T of sugar

Directions:
Directions:
Chop up bacon and brown in skillet. Enjoy the aroma as it sizzles!
Turn off heat.
Combine the beans (do not drain), sugar and onions in large electric roasting pan or equivalent. Dump in bacon with grease. Bring to boil then reduce to medium heat for 6 hours. Do not let them cook dry, but you want to cook them down to reduce liquid by half. Enjoy.

I occasionally will add some new red potatoes to the mix. The "Italian" green beans are more like the "down home" pole beans which in my view make a nice dish. Sometimes I also like a little diced tomato for a little color. The secret is cooking these down and letting the flavors mix. A full roaster will have about 90 servings so fill it up and take care of that hungry bunch.
