(1) 9 inch x 13 inch baking pan
1 box (18 servings) instant mashed potatoes (Idahoan works for me!)
5 c. water
2 1/2 tsp. salt
1 1/2 stick of butter
1 tsp. garlic powder
3 cups of milk (whole works for me!)
8 oz. sour cream with chives
8 oz. Cream Cheese
16 oz. Shredded Cheese (Cheddar, etc)
Black Pepper
1 T Dried Chives

Directions:
Directions:
In large mixing bowl, combine water, salt, 1 stick butter and heat to boil. Add cold milk, stir in potatoes. Add sour cream with chives, cream cheese, garlic and shredded cheese, holding back 1/2 c. shredded cheese for topping. Place mixture in baking pan. Spread remaining slices of 1/2 stick of butter on top. Sprinkle remaining 1/2 c. shredded cheese on top. Sprinkle 1 T dried chives on top. Add black pepper to taste. Bake at 375º for 45 -50 minutes, until cheese is just turning golden. Remove and let set 10 minutes before serving.

You may prepare this dish ahead of time and refrigerate prior to baking. This works out very well if you need to spread your preparation time out a bit, plus it gives the ingredients time to "get happy". You can add bacon if you like or vary it most any other way you like. Have fun making this your own! This dish holds heat very well and can be scaled up fairly easily. You don't want it to be too dry, so adjust water / milk / baking time accordingly.
