4 ears Corn
1 cup Queso Fresco (Mexican crumbling cheese) or Cotija Cheese (Mexican Parmesan)
1/2 cup Mayo
juice of 1 Lime
Cayenne Pepper to taste
1tbs Minced Garlic
Salt and Pepper to taste

Directions:
Directions:
Mix together mayo, lime, garlic, cayenne, salt and pepper. Should be the consistency of a thin ranch dressing. May need to add more or less lime depending on how juicy the lime is. Should be very tart which a little heat.
Grill Corn in foil (shiny side in) until cooked and slightly charred in places.
Brush grilled corn with lime/cayenne dressing and roll or sprinkle with crumbles cheese.
May cut corn off cob and mix with dressing, top with cheese if making larger batches.
