6 large, russet baking potatoes
2 teaspoons cooking oil
1 to 1 1/2 teaspoons chili powder
Several drops of bottled hot pepper sauce
2/3 cup chopped Canadian bacon or 8 slices of crisp-cooked, crumbled bacon
2/3 cup finely chopped tomato (1 medium)
1 green onion thinly sliced
1 cup shredded cheddar cheese (4 ounces)
1/2 cup sour cream (optional)

Directions:
Scrub potatoes, prick with fork, and bake in a 425 degree oven for 40 to 45 minutes until tender. Cut each potato lengthwise into four pieces. Scoop out inside and save for another use. Combine oil, chili powder, and hot sauce in a bowl and brush on inside of skins. Place wedges, skin side down on a large baking sheet. Sprinkle each with bacon, tomato, and green onion. Top with cheese. Bake in oven until cheese melts and heated through. Serve with sour cream.
