6 extra large eggs
11/2 cups sugar
1/2 lb. (2 sticks) butter, melted
2 teaspoons vanilla extract (or anise your preference)
3 cups flour (I always make it slightly short of that amount to make pizzelles more delicate)
4 teaspoons of baking powder
confectioner's sugar, optional

Directions:
In large bowl, beat eggs. Add sugar gradually, beat until smooth. Add cooled, melted butter. Stir in extract. Stir together flour and baking powder, add to egg mixture, folding and stirring until mixture is smooth.
Heat pizzelle iron. (I rub butter on top and bottoms generously,then wipe up melted butter with paper towel. You want iron to be well-greased but not dripping with butter. you also need iron to be very hot.) Drop about 1 tablespoon of batter in center of heated grid. Close iron and hold steady while steam escapes. Check for doneness after about 30 seconds. Pizzelle should be light brown before removing it from iron. Before placing on cooling rack, while pizzelle is still hot and soft, I take kitchen scissors and cut into quarters. Let cool completely , then I sprinkly lightly with Confectioner's sugar. Place in tightly sealed container. CAUTION: pizzelles absorb moisture very easily and will become limp if exposed to any moisture or stored with other baked goods that are moist.
