5-6 eggs (2 beaten & 3-4 hard boiled and cut up)
1/3 c. sugar
1/4 c. vinegar + 1 T. (if using white vinegar, use 1/4 c. or less)
1 - 1 1/2 c. mayonnaise
1 tsp. celery seed
1 tsp. yellow mustard
2-3 lbs. potatoes (boiled and peeled)
1/2 c. celery, chopped
1/2 c. onion, chopped
salt and pepper to taste
Optional: paprika

Beat 2 eggs and add sugar and vinegar. Cook on stove until mixture thickens like pudding, stirring constantly. Let cool. Add mayonnaise, celery seed, and mustard and mix. Add the hard boiled eggs, celery, onion, and salt & pepper to taste.

Boil potatoes, let cool and cut up (do not refrigerate - the flavor is best when the dressing is put on potatoes that haven't been refrigerated).

Mix everything together and sprinkle with Paprika.
