1 cup Vodka (or rum, brandy, etc.)
3 Vanilla beans
Bottle with a tight seal

1) Split the bean pods lengthwise using a knife or scissors.
2) Drop the pods into a bottle and cover with vodka (or your alcohol of choice)- You can also add 2 tablespoons of dark rum to the bottle for richness if desired.
3) Store in a sealed bottle in a dark area (cupboard) for 2 months, turning and shaking the bottle every 2 weeks or so.
4) Use in any baking recipe just like you would vanilla extract.

This recipe can be made in any quantity as long as you keep the ratio of 1 bean to 1/3 cup liquor. You can refill your bottle by topping it off with vodka every so often- keeping the same vanilla beans for up to 3 full bottles of extract. I like to add one new bean each time I make a new batch- I keep an extra bottle "brewing" in the cupboard while I use one, then swap them out when I run out.

You can buy the vanilla beans in large quantity online (I prefer Beanilla.com or Amazon.com) - one bean can cost up to $10 in a store, but you can get 50+ beans for $20 on Amazon. I like to use Madagascar vanilla beans any brand of alcohol.

When I am done with the bean pods, I put them in a container with plain granulated sugar and after about 2 weeks it makes Vanilla Sugar, which adds a bit of richer vanilla flavor to any baking project (you can use it just like regular sugar in recipes, or try some in your coffee).
