1/2 cup of flour
1/2 cup of oil
1 cup chopped onions (yellow or white)
1 cup chopped celery
1/2 cup chopped green onions
3 - 4 8 oz cans of chicken stock
Dash of Cajun seasoning
Salt, pepper, and tabasco to taste
Shrimp, chicken, sausage - cut into bit size pieces
1 cup chopped okra
File seasoning - optional
Steamed rice

Directions:
Directions:
Brown flour and oil to a dark brown, stirring continuously. Add onions, celery, green onions. Next add chicken stock. Stir well and add Cajun seasoning, salt, pepper, and tabasco. Next add shrimp, chicken and sausage. Simmer for 1 hour. 10 minuets before serving, add okra and file seasoning. Serve over steamed rice.
