Excelsior Cheesecake Recipe

Crust:
2 c. graham cracker
3/4 c. softened butter and combine and put halfway up the side of a springform pan.
Filling:
2 lbs. cream cheese ( 4 8oz pkgs, room temp.)
1 c. sugar
2 eggs
1/2 tsp. vanilla and 1/2 tsp almond extract
Use hand mixers & mix until fluffy, then pour into crust
Place into cold over and set at 350 degrees.
Bake 1/2 hour. Remove from oven and set aside.
Topping: 1 pint sour cream
3/4 c. sugar
1/2 tsp almond extract
1/2 tsp fresh lemon juice
Mix onto partially baked cake and return to oven for 8 more minutes at 350. Chill at least 4 hours before serving.
