1 1/4 C oil
1 C. brown sugar
1 C. sugar
2 tsp baking powder
2 tsp cinnamon
8 1/2 oz crushed pineapple
4 eggs
1 C. flour
1 tsp salt
2 tsp baking soda
3 C finely shredded carrots
1/2 C finely chopped walnuts

Directions:
Directions:
In a bowl blend together oil and sugars. Add eggs one at a time. In another bowl, mix flour, salt, soda, baking powder, and cinnamon. Add flour mixture 1/3 at a time to oil mixture. Stir to blend. Fold in carrots, pineapple, and nuts. Pour into 2 greased 9 inch round pans. Bake at 350º for 45-50 minutes. Cool 10 minutes. Turn out and cool. Frost with cream cheese frosting.
