1 T extra-virgin olive oil
3/4 pound bulk Italian sweet or hot sausage
Half of an onion - finely chopped
2 cloves garlic - finely chopped
8 oz cream cheese - softened
1 C shredded mozzarella cheese
2/3 C freshly grated Parmigiano-Reggiano cheese
2 pinches dried oregano
1 can diced tomatoes with basil, oregano & garlic - drained

Directions:
In a medium skillet, brown the sausage with olive oil. Break into small bite size pieces. Drain off all but a few tablespoons of fat from the sausage. Reduce the heat to medium. Add garlic and onion. Cook until tender.
Preheat the broiler with the rack set 8-10 inches away from heat. Combine the cream cheese with half the mozarella and half the Parmigian-Reggiano. Stir in the oregano and then fold the sausage into the combined cheeses. Spread the mixture into a casserole. Top with tomato sauce and remaining cheese. Cover with foil and broil for 2 minutes. Then uncover and broil until bubbling. Serve with crackers or bread.
