2 lb. Asparagus
1/3 cup Balsamic Vinegar
3 tbsp. Extra Virgin Olive Oil
1 tbsp. Dijon Mustard
1 tsp. minced Garlic
1/2 small Red Onion chopped

Directions:
Directions:
In a large saute pan bring the asparagus to a boil and let cook for about 3-4 minutes until slightly tender. Remove from the heat, drain, and add old water to stop the cooking. Place asparagus on paper towels and let air dry and then cool in refrigerator for about 1 hour.
Mix the balsamic vinegar, olive oil, Dijon mustard and garlic together until blended.
Pour dressing over the asparagus but do not drench. Sprinkle with the red onion.
Serve cold.
