2 bunches arugula (washed and dried)
1 bag of butter lettuce or bibb
1 ripe pear, thinly sliced
1/2 lemon, juiced
8 ounces Maytag or imported blue cheese, crumbled

DRESSING:
2 T. white wince vinegar
1/4 apricot all fruit spread
1/3 cup extra virgin olive oil
salt and freshly ground black pepper

Directions:
Directions:
Combine arugula leaves and other lettuce in a salad bowl. Squeeze a little lemon juice over pear slices to keep them from browning. Arrange them on top of lettuces. Top salad with blue cheese crumbles. Combine vinegar and apricot preserves. Stream in oil as you whisk dressing. Pour dressing over salad. Season with salt and pepper to taste and serve.

Personal Notes:
Some don't care for arugula lettuce, so you can with all butter or bibb lettuce or substitute red and green leaf lettuce. Make sure your blue cheese is fresh. It will get very strong and bitter if opened long before you add to your salad. Delicious!!!
