4 lbs. chicken breasts
1/2 lb. mushrooms
3 Tbsp. lemon juice
Thyme
3 Tbsp. butter
1/2 C. dry white wine
Salt and pepper
3 Tbsp. olive oil
2 C. chicken stock
1 bay leaf

Directions:
Directions:
Wash the chicken; sprinkle with lemon juice, salt, pepper and thyme. Cover and refrigerate for 1 hour or longer. Heat olive oil to sizzling in a large skillet. Sauté chicken until golden brown. Remove to a casserole. Add butter to the skillet; sauté mushrooms. Blend in flour (about 2 heaping Tbsp.); add chicken stock and wine, a little at a time. Cook, simmering until thick, add bay leaf. Pour sauce over chicken in casserole, scrape skillet for all goodness. Bake at 325 degrees for 1 hour or until tender. Serves 6.
