2 1/2 c flour
1 1/2 c sugar
1 tsp baking soda
1 tsp salt
1 tsp cocoa powder
1 1/2 c vegetable oil
1 c buttermilk, room temp
2 large eggs, room temp
2 T red food coloring
1 tsp white vinegar
1 tsp vanilla extract

Preheat oven to 350º. In medium bowl, sift together flour, sugar, baking soda, salt and cocoa powder. In a large bowl, gently beat together oil, buttermilk, eggs, food coloring, vinegar and vanilla with mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined. Fill cupcake papers about 2/3 full. Bake for 20-22 minutes, turning pans once halfway through. Test with toothpick. Cool completely. Frost with cream cheese frosting.

If you don't have buttermilk, you can substitute sour milk. To make, place 1 T lemon juice or vinegar in a glass measuring cup. Add enough milk to make 1 cup total liquid, stir. Let mixture stand for 5 minutes before using.
