18 eggs
1 lb bacon, cut into 1" pieces
1 med onion, diced
1/2 green pepper
1 lb cheddar cheese
sliced jalapeños (optional)

Chipped Beef and Gravy:
dried beef (1/2 package dried beef to 1 cup gravy)
2 T butter
2 T flour
1 c milk

Directions:
Directions:
Scramble eggs and set aside. Combine bacon, onion, peppers and jalapeños and saute' until bacon is crispy. In 9x13 pan, layer 1/2 the eggs, then 1/2 the bacon mixture, the 1/2 the cheese. Repeat eggs and bacon.

Rinse dried beef, pat dry and cut up into small pieces. Melt butter in skillet and mix in flour. Slowly add milk, stirring with pancake turner to smooth out lumps. Add salt and pepper. Mix in dried beef. Stir to heat.

Pour chipped beef and gravy over top of casserole. Top with remaining cheese. Bake at 350º for 30-35 minutes.
