2 lbs turkey breast, cut into small pieces
1 large white onion, diced
2-15 oz cans green chili enchilada sauce
1 can cream of chicken soup
1 small can green chilis, diced
1 small can jalapeños, diced
1 T chili powder
1 1/2 tsp ground cumin
16 oz sour cream
2 lbs shredded cheddar cheese
12 flour tortillas

Directions:
In medium sauce pan, mix enchilada sauce (1 can), cream of chicken soup, half the diced onion, diced green chilis, diced jalapeños, cumin and chili powder. In skillet, saute' turkey pieces until done. After 30 minutes, remove sauce pan from heat and immediately add turkey pieces, 1lb cheese, sour cream, and remaining raw onion. Mix well. Pour small amount of enchilada sauce into 9x13 baking dish, just enough to coat bottom of pan. Fill tortillas with turkey mixture, roll up and place rather tightly into the pan. Pour remaining enchilada sauce over top of enchiladas and cover with remaining cheese. Cover tightly with foil and bake at 350º for 30-40 minutes or until hot. Garnish with cilantro, jalapeños, black olives, onions, guacamole, etc.

This takes a little prep, but is very good! This is how we cook a lot of the wild turkey Brian and Noah hunt. You should eat the leftovers within a few days or the turkey gets a little chewy.
