After fish are cleaned, cut them into serving size pieces. If desired, remove skin and bones, but that isn't necessary. Soak raw fish in:
1 cup salt mixed with 4 cups water.
Let sit 48 hours then drain. Soak in clear white vinegar for 48 hours. Drain and cover with cool brine.

To make brine, combine:
4 cups vinegar
2 cups sugar
4 bay leaves
4 Tbsp pickling spices
Bring to boil, then cool. When cool, add 3 Tbsp lemon juice. Pour brine over fish and add some thinly sliced onions. You can eat it after a couple of hours, but the next day is better.
