Chicken beast (pounded thin 1/4 " thick)
Butter formed into 1-2" balls
2 tbsp. chopped chives
1 tbsp. parsley
1 clove of garlic
1/2 tsp. salt
1/4 tsp. white pepper
flour for dusting
dry bread crumbs

Directions:
Directions:
Preheat deep fryer 325º.

Pound boneless chicken breast. Form butter into balls and roll lightly into mix of chives, parsley, garlic, salt and pepper. Place one seasoned ball in center of each breast and roll so butter is completely enclosed. Secure with toothpicks. dust with flour, brush with beaten egg. Roll in dry bread crumbs. Fry in deep fat until golden brown. About 10 mins.

To reduce calories you could bake in oven instead of frying if sprayed with a light coating of olive oil.
