1 baked pie shell (see Bobbie's pie crust recipe)
4 T flour
3 eggs, separated
1 t. vanilla
2 c. milk
3/4 c. sugar
1/4 c. cocoa
pinch of salt
1 T butter

Directions:
Directions:
Measure dry ingredients into large glass microwaveable bowl. Separate egg yolks to bowl and reserve whites for meringue. Add milk to bowl and blend. Cook on high for 5 minutes, then remove and stir. Cook on high for another 2 minutes, then remove and stir well. Add butter and vanilla and cook 30-45 seconds longer if needed.

Pour into pie shell, top with meringue and bake at 350 for 15 minutes.

For coconut cream pie, omit cocoa and add 1/2 c.
coconut after the pudding is done. Top with meringue and sprinkle coconut on top.
This same pie filling can be used to make a simple chocolate pudding or a banana pudding (omitting the chocolate and adding bananas once it's cooled).
