4 boned chicken breasts, sliced thin
½ cup olive oil
Flour and salt
½ cup dry white wine

Directions:
Directions:
Slice chicken in thin fillets, or flatten to uniform thickness (about ¼”). Salt, flour and fry in olive oil until golden brown. Pour wine over chicken and shake skillet as wine bubbles for 2 minutes.

Spoon sauce over chicken and serve as main or second course.

It is best served hot but can be made ahead and quickly re-warmed prior to serving.

It's not Italian to serve this chicken with mashed potatoes but Gerald likes it that way so that is what I do. Sautéed spinach (in olive oil with garlic and lemon) works well as another side dish.
