Ingredients: 5 lbs of Red Russet Potatoes 1 - 1.5 lbs of Thick sliced Bacon 2 - 3 large Sweet Yellow Onions 1 cup sugar 2/3 cup Apple Cider Vinegar 1 T black Pepper 2/3 Cup Flour 2 - 3 cups of water

Directions:Boil Potatoes in their jacket until just tender (don't overcook) Drain and set aside to cool. Once cool peal the jackets off with a knife and cube. Set aside. Fry bacon until real crisp. Let cool and chop - set aside. Save drippings. Chop onions into good size pieces (not too small).
In large fry pan saute the onions in the bacon grease. Remove the onions but save the grease. Add the flour to the grease to make a rue. Add vinegar, sugar, pepper and a couple cups of water to the rue and blend in with a whisk. Turn heat up to low medium until the mixture thickens. Taste the mixture to see if you have the right tanginess add extra sugar or vinegar to your desired taste. Once the mixture thickens (but not too thick) add more water if mixture is too thick - pour the hot mixture over the potatoes until all spuds are well coated. Next fold in those delicious bacon bits and serve hot. |
