1 tsp. olive oil 1 c. diced onions
1 lb. extra lean ground beef
3 tbsp. Mrs. Dash Southwest Chipotle 10 minute marinade.
1 bunch romaine lettuce - torn
1/2 c. shredded cheddar cheese
1 can dark kidney beans - drained and rinsed
2 large tomatoes - diced

Directions:
Add oil to large saucepan and heat. Add 1/2 c. onions and cook until soft. Add beef, increase heat and continue to cook for 5 minutes, stirring occasionally until meat is no longer pink and juices are clear. When beef has cooked, add Mrs. Dash marinade. In a clear bowl layer half of lettuce, then ground beef mixture, then layer 1/4 c. cheese. Layer remaining lettuce and beans. Top with diced tomatoes, remaining 1/2 c. onions and remaining cheese.
