3 ears of corn
1 can black beans (rinsed)
3 fresh tomatoes - diced
1-2 jalapeņos, seeded and finely diced
2-3 assorted peppers, your choice, diced
1 diced onion
3-4 cloves of garlic, minced
1/2 bunch of cilantro, chopped
1/4 bunch of parsley, chopped
The juice of one lime
Salt to taste

Blanch the corn, and then remove the kernels. Add to a bowl, with the chopped and diced vegetables, garlic, cilantro, parsely and black beans. Add the juice of one lime and salt to taste. The amount and variety of peppers is optional, depending on your tastes. Serve with tortilla chips.

We use leftover corn on the cob for this, and we pick whatever peppers we have growing. This is a great catchall dish, to use up items we have on hand. Also a crowd pleaser, and inexpensive to make.
