15 oz can of garbanzo beans (AKA chickpeas)
1 tbsp tahini
1 tbsp olive oil
1 tbsp lemon juice
1 celery stalk
1/4 cup onion
10 cloves of garlic**
1/4 cup extra hot hot sauce**
4 oz bleu cheese crumbles**
2 tsp ground cayenne
2 tsp cumin
2 tsp chili powder
salt and pepper to taste

Drain the beans, reserving the liquid.

In a food processor (or blender), combine the beans, tahini, oil, lemon, garlic, onion and celery. IF needed, add reserved liquid in small amounts [blending between pours] until a creamy consistency is reached. Mix in the remaining ingredients. Can be eaten immediately, but best if refrigerated for at least an hour.

I don't normally measure my ingredients, so this is my best guess at appropriate amounts. Don't be afraid to experiment with quantities AND/OR ingredients to make this dish your own. Once you master a "basic hummus" (beans, tahini, oil, lemon, garlic, salt, pepper), the sky's the limit! I've also concocted "Dill Pickled Hummus", "Salsa Hummus", "Roasted Red Pepper Cilantro Hummus" and "Greek Hummus" to name a few. It's your kitchen, get creative!
