2 pounds fresh green peas, shelled or frozen baby peas if off season.
3 tablespoons salted butter
2 tablespoons all-purpose flour
2 cups whole milk
1 teaspoon salt
1/4 teaspoon fresh ground pepper
2 tablespoons sour cream (optional)

Directions:
Directions:
Bring one cup lightly salted water to a boil. Add the peas and cook for 6 to 7 minutes, or until slightly tender. Drain and set aside.
Melt butter, stir in flour and cook until smooth and lightly brown. Slowly wisk the milk and continue cooking on medium heat, stirring often, add sour cream if desired. Add salt and pepper and serve hot.

One of Grandpa Ernie Fossum's favorites and a favorite of the grandkids on the farm. There are several white sauces, but this is best with fresh shelled peas. Grandma would have my brother Rick and I shell the peas, and she would sing hymns while making the rest of dinner or supper.
