1/2 cup extra-virgin olive oil
1/4 cup balsamic vinegar
1 shallot, minced
2 tablespoons honey
1 tablespoon Dijon mustard
1/4 teaspoon ground black pepper
1 6-ounce bag 5-lettuce mix
1 5-ounce bag spring lettuce mix
1/2 cup asparagus, trimmed, cut into 1-inch pieces, blanched
1/2 cup dried cranberries
1/4 cup blue cheese crumbles
1/4 cup candied pecans
Vegetable oil for frying
12 frozen Homestyle Breaded Shrimp

In a small bowl, whisk together oil, vinegar, shallot, honey, mustard, and pepper.
In a large bowl, combine lettuce mixes, blanched asparagus, cranberries, blue cheese, and candied pecans.
In a large Dutch oven, pour oil to a depth of 2 inches; heat to 360˚. Fry shrimp, in batches if necessary, for 2 to 3 minutes, or until golden brown. Drain on paper towels.
Just before serving, combine lettuce mixture and shrimp. Add desired amount of dressing, tossing gently to coat. Serve immediately.

I just use the frozen shrimp and bake them. However, I think it would be even better with grilled shrimp. I love the blue cheese in the salad, and the dressing is delicious.
